The "Lime" used in the process of preserving these pickles is a food grade version of what was used for making white-wash, plaster, and spreading on the fields. The Pennsylvania Dutch Country still has many of the old lime kilns dotting our countryside, although most of them have not been used for nearly 100 years. Our forefathers probably didn't know all the scientific reasons why this was an excellent way of making and keeping pickles, they just knew that it worked and that they taste great. These are a very crisp, green pickles have a delightfully dry, sweet balance. A sweet (not dill) pickle.
